Vegan Sweetcorn Fritters
These vegan fritters are perfect for breakfast or lunch. They are super easy to make and taste amazing.
- 280/9.8 g/oz Organic sweetcorn drained
- bunch Corriander chopped
- 1 Lemon zest
- 120/4.2 g/oz Buckwheat flour
- 185/6.2 ml/fl oz Cold water
- 4 tsp Coconut oil
- 200/7 g/oz Dairy free yoghurt optional
- 1 tsp Chilli sauce optional
- 1 Avocado optional
Place the sweetcorn in a large bowl. Add the chopped coriander and lemon zest, season with salt and pepper.
Next, add in the flour and water and mix until smooth.
Heat 2 tsp. of coconut oil in a large non-stick pan on a high heat. Once the pan is hot, ladle in the mixture and cook for 2-3 minutes on each side, until browned. Cook the fritters in two batches of 4, or divide the oil accordingly if your pan is not big enough (1/2 tsp oil per 1 fritter).
The batter makes 8 medium sized fritters.
Serve with a side of avocado and chilli yoghurt (optional).
